Puffed Quinoa, Date & Peanut Butter Bars

These peanut butter bars are naturally gluten-free, superfood packed and protein rich making the perfect on-the-go snack.
I love this recipe because you can make it however you like and each time can be different (honestly I've made it about 14 times already). Top it with drizzled chocolate, crushed nuts, melted nut butter or even jam, whatever your preference! They turn out so moist (I know, not a great word) compared to the pre-packaged supermarket bars that can feel and taste quite dry.
They are great for not just on-the-go but for when you don't have enough time to prepare breakfast in the morning, a mid-day and bed time snack and even pre and post workout. 
There is no baking required and that's what makes these bars perfect. They are super easy, you definitely need to give them a go!
